Ingredients:
-
1 large Broccoli
-
1 Onion
-
2 cloves Garlic
-
4 slices Pancetta
-
50 gr Stilton cheese
-
1 l Vegetable broth
-
2 tbsp Olive oil
-
1 pinch Salt
-
1 pinch Pepper
-
1 bunch Parsley

- Heat the olive oil in a large soup pot over medium heat. Add the onion and cook until soft and translucent.
- Add the garlic and cook for another minute.
- Add the broccoli florets to the pot and sauté them briefly.
- Pour in the vegetable broth and bring to a boil. Let the soup simmer gently for about 15-20 minutes until the broccoli is tender.
- While the soup is simmering, fry the pancetta pieces in a separate frying pan until crispy.
- Remove the pot from the heat and use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, you can puree the soup in batches in a blender.
- Season the pureed soup with salt and pepper.
- Stir in the crumbled Stilton cheese into the hot soup until fully melted and incorporated.
- Ladle the soup into bowls and garnish with the crispy pancetta and fresh parsley, if desired.
- Serve the Broccoli-Stilton Soup as a challenging and flavorful main dish. It pairs well with fresh crusty bread.
