Healthy macaroni oven dish with carrot-cheese sauce and ham

Macaroni with ham and cheese is a traditional dish that often appears on the table in home kitchens. It is very suitable for picky eaters and is also quick to prepare. The only downside is that it is not very nutritious and contains few vitamins. I have searched for a healthier version of this recipe hundreds of times, but I could not find one.

That's why I started experimenting and eventually came up with this recipe: a variant on the classic macaroni with ham and cheese that is not only different, but also super nutritious. This time, I added carrots to make the dish even healthier, while still keeping it cheap and easy to make. But you can also experiment with spinach or pumpkin. Enjoy your meal !

Instructions:

  •  Peel the carrots and cut them into smaller pieces.
  • Steam the carrots until they are easily mashable with a fork. Set aside.
  • Melt the butter in a pot and gradually add flour until you get a crumbly texture.
  • Add milk and let cook while stirring until it thickens into a béchamel sauce (you can add more or less milk depending on whether you want a thicker or lighter sauce).
  • Add salt and pepper to taste.
  • Remove the sauce from the heat and add the cheese. Stir until you get a homogeneous sauce.
  • Add the carrots to the cheese sauce and use a mixer to get a uniform orange sauce.
  • Cook the macaroni pasta according to the instructions on the package.
  • Mix the macaroni with the orange cheese sauce and the cooked ham.
  • Optionally, you can pour everything into an oven dish and cover it with more grated cheese.
  • Set the oven to grill mode until the top layer of cheese is nicely crispy.
  • Optionally, garnish with pieces of carrot or spicy sauce.
