Ingredients:

Preparing the Potato Puree: 

  1. Boil the potatoes until soft, drain, and make into a smooth puree. Let cool.

Making the Filling:

  1. Heat some oil in a pan and sauté the onion and garlic until translucent. 
  2. Add the ground beef and cook until browned. Add the tomato paste, cumin, paprika, cilantro, salt, and pepper. 
  3. Let the mixture simmer briefly. 
  4. Add the diced hard-boiled eggs to the beef mixture and mix well. Let it cool.

 

Forming the Papas Rellenas:

  1. Take a portion of the potato puree and form a flat disc in your hand. 
  2. Place a spoonful of the filling in the center and fold the potato around it, completely enclosing the filling, and form into a ball. 
  3. Repeat until all ingredients are used.

 

Breading and Frying:

  1. Roll the potato balls first in the beaten egg and then in the breadcrumbs. 
  2. Heat oil in a deep pan and fry the balls until golden brown.

 

Serving:

  1. Let the Papas Rellenas drain on paper towels and serve warm
