Ingredients:

Instructions:

  1. Preheat the oven to 200 degrees Celsius. 
  2. Cut the pumpkin into cubes and place them in a bowl. 
  3. Add a splash of oil, pepper, and salt, and mix everything well. Spread the pumpkin cubes on a baking tray and bake them for 20 minutes in the oven. 
  4. Finely chop the onion and dice it. Sauté the onion in a pan with a little oil. 
  5. Add the risotto rice and sauté it for 3 minutes. 
  6. Deglaze with a generous splash of Madeira and wait until everything is absorbed. Add the water and the broth cube. 
  7. Stir occasionally and let the mixture cook for about 25 minutes. 
  8. Remove the pumpkin cubes from the oven and puree half of them with a hand blender. 
  9. Add the pumpkin puree to the risotto just before the rice is done. 
  10. Stir a knob of butter into the risotto and mix in half of the grated cheese. 
  11. Season with pepper, salt, and marjoram. Chop or blend the mixed nuts into coarse pieces. 
  12. Serve the risotto and garnish with some cheese, mixed nuts, and pumpkin pieces.
