Ingredients:

300 gr Risotto rice

1 Pumpkin

1 Onion

100 gr Grated Parmesan cheese

50 gr Butter

200 gr Mixed nuts

1 splash Madeira

1 cube Vegetable broth

1 l Water

1 Marjoram

1 pinch Pepper

1 pinch Salt
Instructions:
- Preheat the oven to 200 degrees Celsius.
- Cut the pumpkin into cubes and place them in a bowl.
- Add a splash of oil, pepper, and salt, and mix everything well. Spread the pumpkin cubes on a baking tray and bake them for 20 minutes in the oven.
- Finely chop the onion and dice it. Sauté the onion in a pan with a little oil.
- Add the risotto rice and sauté it for 3 minutes.
- Deglaze with a generous splash of Madeira and wait until everything is absorbed. Add the water and the broth cube.
- Stir occasionally and let the mixture cook for about 25 minutes.
