Ingredients:

500 gr Large shrimp or prawns

50 gr potato flour

150 gr Wheat flour

1 tbsp Baking powder

1 pinch Salt

1 pinch Pepper

200 ml Water

1 tbsp Olive oil
Instructions:
- Peel the shrimp, leaving the tail intact.
- Mix the potato flour, baking powder, salt, and pepper together.
- Add the oil and water and mix until a smooth, thick batter is formed.
- Heat the oil (500ml) in a wok or fryer on medium heat.
- Dip each shrimp into the batter, holding it by the tail.
- Place the shrimp in the wok or fryer.
- Fry until golden brown.
- Serve with sweet chili sauce.
