  1. Soak fourteen sheets of gelatin in cold water.
  2. Cut one kilogram of cleaned strawberries into small pieces.
  3. Add these pieces along with 150 grams of fine sugar, half of the lemon juice and the strawberry liqueur to a pan. Cook the mixture uncovered for five minutes until it softens and caramelizes.
  4. Puree the strawberries and strain the puree through a fine sieve.
  5. Dissolve the squeezed gelatin in the warm strawberry puree.
  6. Pour about three centimeters of the puree into eight tall glasses and let it set.
  7. Meanwhile, also soak the remaining gelatin sheets.
  8. Split the vanilla beans and scrape the vanilla out with a sharp knife.
  9. Mix the egg yolks with the vanilla powder, lemon peel, the remaining lemon juice, and the fine sugar for five to seven minutes with a mixer until the mixture is smooth and frothy.
  10. Add the fresh cheese and dissolve the gelatin in some warm water. Add this to the mixture and beat the cream until stiff. Fold the fluffy whipped cream into the cheese mixture.
  11. Divide the cream over the glasses and refrigerate for half an hour.
  12. Scoop the remaining strawberry puree onto the cheese cream.
  13. Let the dessert set for at least 4 hours in the refrigerator.
  14. Garnish the glasses with fresh strawberries, sifted powdered sugar and a sprig of fresh mint just before serving.

Also delicious with raspberries or red currants or with a mix of red fruits.
You can also replace the fresh full-fat cheese with plain yogurt.
