Kitchen: Belgian Cuisine
Cost Range: Cheap

Instructions:

Dough preparation:

  • In a large bowl, mix the flour, speculaas spices, baking powder, and salt.
  • Add the dark brown sugar and blend it with the dry ingredients.
  • Cut the butter into small cubes and add to the bowl. Knead the mixture by hand or use a food processor until a crumbly consistency is achieved.
  • Gradually add the milk until the dough comes together. The dough should be firm but not too wet.

Resting:

  • Form the dough into a ball and wrap it in plastic wrap. Let the dough rest for at least 2 hours (or ideally overnight) in the refrigerator. This helps the flavors to develop and makes the dough easier to handle.

Rolling and shaping:

  • Preheat the oven to 175 degrees Celsius.
  • Roll out the dough on a lightly floured surface to about 5 mm thickness.
  • Use a cookie cutter to cut out the speculoos cookies. If you want to use almond flakes, press them lightly into some of the cookies.

Baking:

  • Place the cookies on a baking sheet lined with parchment paper, ensuring there is space between them as they will expand slightly.
  • Bake the cookies in the preheated oven for about 15-20 minutes or until they are beautifully browned and crispy.

Cooling:

  • Remove the cookies from the oven and let them cool for a few minutes on the baking sheet.
  • Then transfer the cookies to a rack to cool completely.

Enjoy your homemade speculoos cookies with a cup of tea or coffee, or use them in other desserts like a cheesecake base. These cookies are also perfect for giving as a gift during the holiday season!
