Ingredients:

2 bunches Radishes

4 medium Potatoes

1 Onion

2 cloves Garlic

1 pinch Salt

1 pinch Pepper

100 ml Cream

1 l Vegetable broth

0.5 tbsp Curry powder

1 tbsp Olive oil
Instructions:
- Cut the radishes from the leaves and wash the leaves thoroughly. Save some radish leaves for garnish. Slice the radishes into thin slices.
- Heat the olive oil in a large pan. Add the onion, garlic, and curry powder and sauté them until they are soft.
- Add the potato cubes to the pan. Fry them for about 5 minutes with the onions, garlic, and curry powder, stirring regularly.
- Add the sliced radishes and radish leaves to the pan. Cook them for 5 minutes.
- Add the vegetable broth to the pan. Bring everything to a boil and then let it simmer for about 20 minutes, or until the potatoes are cooked.
- Puree the soup with a hand blender until smooth. Add salt and pepper to taste. If you want a creamy soup, you can now add the cream and let it cook for a few more minutes.
- Serve the soup in bowls, garnished with the reserved radish leaves and a drizzle of olive oil for extra flavor.
