Radish Soup with Curry

  1. Cut the radishes from the leaves and wash the leaves thoroughly. Save some radish leaves for garnish. Slice the radishes into thin slices.
  2. Heat the olive oil in a large pan. Add the onion, garlic, and curry powder and sauté them until they are soft.
  3. Add the potato cubes to the pan. Fry them for about 5 minutes with the onions, garlic, and curry powder, stirring regularly.
  4. Add the sliced radishes and radish leaves to the pan. Cook them for 5 minutes.
  5. Add the vegetable broth to the pan. Bring everything to a boil and then let it simmer for about 20 minutes, or until the potatoes are cooked.
  6. Puree the soup with a hand blender until smooth. Add salt and pepper to taste. If you want a creamy soup, you can now add the cream and let it cook for a few more minutes.
  7. Serve the soup in bowls, garnished with the reserved radish leaves and a drizzle of olive oil for extra flavor.
