Ingredients:

50 gr Butter

1 Tabasco

1 bunch Marjoram

1 Ketchup

70 gr Tomato paste

250 ml Cream

1 pinch Pepper

1 pinch Salt

2 Shallot
-
2 cloves Garlic

2 Eggs

8 tbsp Breadcrumbs

1 bunch Parsley

1 kg Potatoes
Instructions:
- Cut off the tops of each tomato, making sure to cut in a way that the tomato won't tip over.
- Carefully remove the insides of the tomatoes using a spoon and set aside in a separate bowl.
- In a large bowl, mix the ground meat with the eggs, chopped garlic, breadcrumbs, finely chopped parsley, and sliced shallots.
- Season the tomatoes with salt and pepper. Fill the tomatoes generously with the meat mixture.
- Grease a baking dish with butter and place the stuffed tomatoes inside.
- Place the cut tops back on the tomatoes and gently press them inwards. Place a small piece of butter on top of each cap.
- Bake the tomatoes in a preheated oven at 210°C for 30-40 minutes.
- While the tomatoes are baking, cook the potatoes.
For the sauce:
- Add a small amount of water to the reserved tomato pulp in the bowl and blend it using an immersion blender.
- Add ketchup, tomato paste, tabasco, salt, and pepper to taste to the tomato juice. Allow the sauce to simmer and reduce.
- Then, add the heavy cream to the sauce and reduce the heat.
- Finally, add the marjoram and the remaining parsley to the sauce and let it simmer.
Serve the stuffed tomatoes with the sauce and cooked potatoes. Enjoy your meal!
