Ingredients:

Instructions:

  1. Cut off the tops of each tomato, making sure to cut in a way that the tomato won't tip over.
  2. Carefully remove the insides of the tomatoes using a spoon and set aside in a separate bowl.
  3. In a large bowl, mix the ground meat with the eggs, chopped garlic, breadcrumbs, finely chopped parsley, and sliced shallots.
  4. Season the tomatoes with salt and pepper. Fill the tomatoes generously with the meat mixture.
  5. Grease a baking dish with butter and place the stuffed tomatoes inside.
  6. Place the cut tops back on the tomatoes and gently press them inwards. Place a small piece of butter on top of each cap.
  7. Bake the tomatoes in a preheated oven at 210°C for 30-40 minutes.
  8. While the tomatoes are baking, cook the potatoes.

For the sauce:
  1. Add a small amount of water to the reserved tomato pulp in the bowl and blend it using an immersion blender.
  2. Add ketchup, tomato paste, tabasco, salt, and pepper to taste to the tomato juice. Allow the sauce to simmer and reduce.
  3. Then, add the heavy cream to the sauce and reduce the heat.
  4. Finally, add the marjoram and the remaining parsley to the sauce and let it simmer.
