Delicious Potato and White Asparagus Soup

Ingredients:

Instructions:

  1. Heat the olive oil in a pan over medium-high heat and sauté the onion and garlic until soft and golden brown.
  2. Add the diced potatoes and cook for about 2-3 minutes.
  3. Pour in the vegetable broth and bring to a boil. Let it simmer until the potatoes are cooked.
  4. Sear the asparagus in a separate pan with a little olive oil until they get a nice color.
  5. Add the white wine to the pan with the asparagus and wait for the wine to evaporate.
  6. Add the asparagus pieces to the pan with the potatoes and broth and let it simmer for another 5 minutes until the asparagus is tender.
  7. Season with salt and pepper and add the asparagus peel water for extra flavor (see tip below).
  8. Stir well and let the soup simmer for another 5 minutes.
  9. Remove the pan from the heat and puree the soup with an immersion blender until smooth.


Tip:
Add the white asparagus peels to a separate pan with water and let them boil for about 20 minutes. Strain the asparagus peel water and add it to the soup for extra flavor. The asparagus peels contain a lot of flavor and nutrients, so it's a smart way to use them and improve the taste of the soup.
