potato white asparagus soup

Ingredients:

500 gr White asparagus

2 medium Potatoes

1 Onion

2 cloves Garlic

1 l Vegetable broth

1 tbsp Olive oil

1 pinch Salt

1 pinch Pepper

100 ml White wine
Instructions:
- Heat the olive oil in a pan over medium-high heat and sauté the onion and garlic until soft and golden brown.
- Add the diced potatoes and cook for about 2-3 minutes.
- Pour in the vegetable broth and bring to a boil. Let it simmer until the potatoes are cooked.
- Sear the asparagus in a separate pan with a little olive oil until they get a nice color.
- Add the white wine to the pan with the asparagus and wait for the wine to evaporate.
- Add the asparagus pieces to the pan with the potatoes and broth and let it simmer for another 5 minutes until the asparagus is tender.
- Season with salt and pepper and add the asparagus peel water for extra flavor (see tip below).
- Stir well and let the soup simmer for another 5 minutes.
- Remove the pan from the heat and puree the soup with an immersion blender until smooth.
Tip:
Add the white asparagus peels to a separate pan with water and let them boil for about 20 minutes. Strain the asparagus peel water and add it to the soup for extra flavor. The asparagus peels contain a lot of flavor and nutrients, so it's a smart way to use them and improve the taste of the soup.
