Ingredients:

150 gr Salted bacon

200 ml Olive oil

3 cloves Garlic

2 kg Onions

6 Tomatoes

200 gr Potatoes

1 small Green cabbage

2.5 l White stock

150 gr Green beans

3 stalks White leeks

1 stalk White celery

3 kg Turnips

3 kg Carottes

50 gr Spaghetti

1 bunch Basil

1 bunch Chervil

100 gr Peas
Instructions:
- After washing the vegetables, cut them into small pieces.
- Clean and chop the garlic.
- Cut the bacon into very fine strips (lardons).
- Make a small cross on the tomato and immerse it in boiling water for 10 seconds, cool it with cold water, remove the skin and cut the tomatoes into small cubes.
- Peel and wash the potatoes.
- Cut the green cabbage into fine pieces.
- Cut the basil into fine strips (chiffonade).
- Gently sauté the chopped onions, bacon and garlic in olive oil and add the chopped vegetables.
- Moisten with white stock and let it simmer gently for 30 minutes.
- Add the crushed tomatoes, peas, sliced green beans and broken spaghetti at the end.
- Let it simmer slowly for about 3 hours.
- Season with salt and pepper to taste.
